Well, I think I may have just solved my own problem.

By right clicking in any Zone Minder window and selecting reload (firefox, chrome, opera, safari), or refresh (IE) seems to fix the problem.

I have reinstalled ubuntu server 8.10 using the 8.10 vanilla wiki. Installed ZM 1.24.2. Added my 2 monitors and no more.
