The AMD E-350 scores a rating of ~750 on passmark cou rating website. That is an extremely low score. Where an intel i5 would be 4000-6000. I would think you would almost instantly max out the cpu utilization with 2 cameras. Im doing pre-install queries myself, but from what Im reading , if you will ...

Upon reading further, I understand that the motion detection is what really cranks the cpu the most (am I wrong?) I really don't mind recording 2 cameras constantly, although I know that it will be harder to pinpoint security events. How decent is the motion detection? Its looking like a second ...

Shrink your OS/BOOT partitions down to something that is smaller than the new SSD.

Run clonezilla off a bootable usb, clone the partitions you want to the SSD, then replace the old hard drive with the new SSD.

Run for at least a week or 2 before recomissioning the 160 gb drive.
