I got my own answer here:
I was able to get into the DB and I copied the admin user
Then I set the function to password and set the users passwrod the my desired password.

I was then able to get into ZM where I can now set the admin password

I am building a completely new ZM VM and while going through the from scratch setup, I activated the required authentication to access before I had setup any users in ZM. I am not locked out. How can I recover here? I can get to the DB using phpmyadmin, I just need to know what type of crypt ...
