So, I have a camera in MODECT mode and the only setting I seem to be able to configure is the minimum amount of time the camera should record when motion is detected.
What I would like is something like the following:
1. Camera detects motion and starts recording.
2. Recording is limited to 5 minutes.
3. When no motion is detected for 30 seconds, stop recording.
So, rather than configuring the camera to record a minimum value, I want to tell it to record no more than a certain amount, but stop if no additional motion is detected.
Otherwise, I have loads of clips that are 5 minutes long with only 10 seconds or so of activity. I don't want to reduce the 5 minute time because I use the footage in my video editing and more clips more often does not make for easy editing.

In the monitor setup under the Buffers section, you'll want to put the Post Event Image Count to the number of Frames to record after no motion is detected. I.E. If you're recording at 10 FPS and you want to record for 30 seconds after the last motion is detected then you would put in 300 (10 x 30).
To limit the max recording size to 5 minutes you'll want to go into the Misc section of the monitor setup and adjust the section length. This will limit video clips to that length.

Okay, so currently this camera is set to a minimum length of 600 (10 minutes) and the Post Event Image Count is set to 30. I'm thinking this doesn't make logical sense. If the PEIC is less than the minimum length, then it would accomplish nothing, correct?
Now, here's where I'm confused. Let's say the camera detects motion and starts recording. It's going to record for 10 minutes, and it will ignore all events until that 10 minutes is up, as evidenced by no additional events inside of that 10 minute period, at which point, if an event is detected, another 10 minute clip will be recorded.
If the post event image count is less than the minimum length, I assume it's ignored since the video will still be recording for another 9:30 after the 30 seconds is up.
So, here's the question. If I set the camera to record a minimum of 60 seconds, but I set the Post Event Image count to 90 seconds, what happens if another event is triggered at 70 seconds, i.e. during that PEIC period?
1. Will the current video continue to record until the last detected motion stops --or--

You are correct with the Minimum Section Length. You'll want to lower that to a more reasonable setting based on your Post EIC. Are you sure you're looking at Minimum Section Length and not just Section Length? The default for MSL is 10 seconds where the default for SL is 600.
In the case where you have the Post EIC set to 90 seconds (in frames) and MSL to 60 seconds, if motion is detected for 2 seconds, then nothing is detected for 70 seconds then motion is detected again, it would continue with the first event as the event close conditions (90 sec Post EIC AND Min of 60 seconds) has not been satisfied.
