I want to move off my current FC4 server to an IBM 342 (1RX) 2x Processor.
If I install FC4 will it autorecognize the additional processor (there are two).
And will Zoneminder be able to utilize it?

multiple processors
If fc4 does not recognize your multiple prozessors, you can use the linux distributions Scientific Linux or CentOs. Both are based on Redhat AS which supports multiple physical CPUs. And because they are based on Redhat you can use the rpms for redhat enterprise from the dag repository.
