cameras for cold rooms

I work for a meat plant, and we've wanted a good camera system for a while. the big problem is we need to monitor not only offices and parking lots, but primarily we need to monitor production and storage areas. all of these rooms are very hostile environments very cold and constantly fluctuating humidity, so we need some very robust equipment that can handle long virtually constant cold with periodic blasts of warm humid air (and the resultant condensation), not to mention teenagers shooting them with hoses and chunks of meat.

any suggestions?
