Ok, I was thinking those should have been available via the repos. The latest set of updates for Fedora 20 appear to have resolved the issue with the gnutls libraries. I am able to run ZM 1.26.5 with the following gnutls packages:
gnutls-dane-3.1.20-4.fc20.x86_64
gnutls-devel-3.1.20-4.fc20.x86_64
gnutls-debuginfo-3.1.20-4.fc20.x86_64
gnutls-3.1.20-4.fc20.x86_64
gnutls-c++-3.1.20-4.fc20.x86_64
Have not tried this with ZM 1.27.

I recommend you continue to use yum-priorities and set the priority of zmrepo to something large like 50.
