I would like to avoid having a separate machine, is it possible to run this on my day to day Xubuntu setup?
If not, would a Raspberry Pi work to monitor and record 3-5 cameras (Axis 210) worth of mjpegs?

Well, Rpi + 5 Axis 210 cams... I do not see it, you may need a powerful device. It will work on your Xubuntu setup is you have at least 2Gigs of RAM, I will go for this option. My guess is that a device like a RPi does not have enough CPU power nor RAM to handle this configuration you are suggesting. Give it a try and post results.

So it looks like Xubuntu would be a go. Thanks! I will continue a new thread on the Pi. I like the idea of everything running on a 12V battery locally.
