I work for a meat plant and we need a camera system for monitoring storage and production. these rooms are cold (right around freezing) and have a lot of condensation. i would like some recommendations for the hardware I'd need to accomplish this.

Anything labeled outdoor I think would be fine for you. Unless you plan on surveyling something below -50F you should be ok with standard outdoor equipment. If that is the case your only option is going to be custom equipment ie you'll have to modify your cameras and put some mini heating pads in them. which isn't uncommon for electronics in very cold environments.

The only problem I forsee with regular outdoor equipment in your fridge is people opening and closing your fridge doors all day walking in and out which might cause big and fast temp fluctuations. you might get some fog on the outside of the lens but some anti-fog coating, that same stuff you might use for underwater goggles would do the trick.
