This is happening frequently and starting to really annoy me as the action that I end up always needing is in this massive 2 hour video.

It is possible that you will have to change your motion detection settings.
or
if you are getting streaking in your image, which can happen with ffmpeg, that could be causing the l o n g event. Try forcing TCP to improve stream or slowing down camera frame rate/key frame interval.
