Does anyone know how I can stop zmc from inserting a line into syslog like one of the following:

Jul 1 14:38:40 goldengate zmc-d0[1416]: INF [LA-WG: 1405000 - Capturing at 24.39 fps]

I find it a bit annoying having my syslog flooded by those non-interesting debug output that comes about every 40 seconds.

Unfortunately I didn't find a suitable switch to disable that so maybe it's necessary to directly change some code?

The interval is set in the "FPS Report Interval" field in the "Misc" section of the monitor definition pop-up, I think....

Thats correct, just set it to some unfeasibly large value.
