I am new to zoneminder, but i think it could do it for you setting the monitor type to "record"!

Is that going to record hours of nothing? my goal is to have the motion dection and then conver that into a time lapse video so I can watch a full day from me being away in a few minutes.

Record will indeed record everything, either in 10 minute chunks (default) or whatever you set it to.
Modect records motion detection - but one event per instance, not the whole day (Unless you set it to, but then it'll just be like record)
Have you actually tried viewing the events with thumbnails? That gives an at-a-glance list of what triggered the event, with the option to view the entire event and it's what we use to review multple cameras.
Also Timeline is very good (on a LAN, too much latency for it to be very useful over the internet, i find).
Suggest you leave at Modect for now, get some events recorded and then play with the interface - what you want to do is what most of us also want to do, and the defaults (apart from thumbnails and descend-sorting of events) are what I use daily too.
I'm sure it is possible to make one big movie of all the modect events by smooshing together the jpegs and running ffmpeg or something over them - how's your scripting skills?
